■ 米糀について / About Our Kōji Rice
この味噌のもとになる米糀は、鎌倉時代から800年受け継がれてきた「香取市産太郎左衛門米」から生まれます。化学肥料や農薬を減らし、人の手で田を守り、生き物が息づく環境を育むお米。収穫後はじっくりと乾燥させ、旨みと香りを閉じ込めます。香取の肥沃な大地と穏やかな気候が生み出す、手間ひまとやさしさの詰まった一粒が、土地を守り、未来を育んでいます。（「ちばエコ農産物認証」取得／香取市府馬）

Our kōji begins with Katori’s Tarōzaemon rice, cultivated with care for over 800 years since the Kamakura era.Grown with reduced chemical fertilizers and pesticides, in fields nurtured by human hands and alive with wildlife, this rice is harvested and slowly dried to preserve its natural aroma and depth of flavor.Blessed by Katori’s fertile soil and gentle climate, it embodies a tradition of “time and kindness,” sustaining the land and nourishing the future.
